“Mustgo” Pasta Salad

As I was creating my first post I was also endeavoring to create a tasty and reasonably nutritious dinner.  Using a technique others have used to make “mustgo” soup (everything in the fridge must go) I created “mustgo” pasta salad:

Ingredients

  • 12 oz box Tricolor Rotini
  • 12 Grape tomatoes (halved)
  • 3 String Cheese (diced)
  • 1 avocado (diced)
  • 1/2 cup Italian Dressing

Directions: Cook rotini according to package directions (I added a dollop of Wildtree grapeseed oil to the water). Drain. Rinse. Cool.  While preparing pasta, combine the tomatoes, cheese and avocado in a large bowl.  Fold the cooled rotini into these ingredients.  Toss with Italian dressing.  Salt and Pepper to taste.  Serves 4-6.

I enjoyed it with a glass of Pinot Grigiot.  What’s your favorite spur of the moment concoction?
